Prepare the Base
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are browned and have released their moisture, about 7-10 minutes.
- Stir in the orzo pasta, vegetable broth, dried thyme, salt, and pepper. Bring to a simmer and cook for about 5 minutes, stirring occasionally.
Bake the Dish
- Transfer the orzo mixture to a greased baking dish.
- Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.
- Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
- Once baked, let it cool for a few minutes before serving. Garnish with chopped parsley.
