Prepare the Grits
- In a medium saucepan, bring the chicken broth to a boil.
- Add the grits and salt, reduce heat to low, and simmer for 20-25 minutes, stirring occasionally.
- Once the grits are thick and creamy, stir in the butter and cheese until melted and smooth.
Cook the Shrimp and Sausage
- In a large skillet, heat the olive oil over medium heat.
- Add the Andouille sausage and cook for 5 minutes until browned.
- Stir in the onion, green bell pepper, and garlic, and cook for another 5 minutes until vegetables are softened.
- Add the shrimp, Cajun seasoning, and black pepper, cooking until the shrimp are pink and cooked through, about 3-5 minutes.
Serve
- Spoon the creamy grits onto plates, and top with the shrimp and sausage mixture.
- Garnish with chopped parsley before serving.
