  • 14 oz firm tofu, pressed and cubed
  • 1 cup bell peppers (mixed colors), sliced
  • 1 cup broccoli florets
  • 1 cup carrots, thinly sliced
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup freshly squeezed orange juice
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 2 tsp sugar or honey
  • 1 tsp sesame oil

Instructions

  1. Press the tofu to remove excess moisture, then cut into bite-sized cubes.
  2. Chop all vegetables so they are ready for quick cooking.
  3. In a bowl, whisk together orange juice, soy sauce, sugar or honey, ginger, garlic, and cornstarch mixture until smooth.
  4. Heat oil in a large skillet over medium heat. Add tofu cubes in a single layer and cook until golden brown on all sides (about 5–7 minutes).
  5. Toss in bell peppers, carrots, and broccoli; sauté until slightly softened but still crunchy (around 3–5 minutes).
  6. Pour the prepared sauce over the stir-fry and stir well to coat evenly. Simmer for 2–3 minutes until thickened.
  7. Add chopped green onions just before serving for added freshness.
