Ingredients
  

For the Cabbage
  • 1 medium green cabbage
  • 3 tablespoons olive oil for drizzling
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
For the Blue Cheese Sauce
  • 1 cup blue cheese crumbled
  • 1/2 cup heavy cream
  • 2 tablespoons lemon juice
  • 1 clove garlic minced

Method
 

Prepare the Cabbage
  1. Preheat the oven to 400°F (200°C).
  2. Remove any wilted outer leaves from the cabbage and rinse it under cold water.
  3. Place the cabbage in a baking dish and drizzle with olive oil. Season with salt and pepper.
Roast the Cabbage
  1. Cover the baking dish with aluminum foil and roast in the preheated oven for 30 minutes.
  2. After 30 minutes, remove the foil and roast for an additional 15 minutes, or until the cabbage is tender and golden brown.
Make the Blue Cheese Sauce
  1. In a small saucepan over medium heat, combine the heavy cream and minced garlic.
  2. Bring to a simmer, then reduce heat to low and add the crumbled blue cheese, stirring until melted and smooth.
  3. Stir in the lemon juice and season with salt and pepper to taste. Remove from heat.
Serve
  1. Once the cabbage is roasted, remove it from the oven and let it cool slightly.
  2. Slice the cabbage into wedges and drizzle generously with the blue cheese sauce before serving.
