White Chocolate Dipped Peppermint Chocolate Christmas Cookies

Ingredients
  

For the Base
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips semi-sweet
For the Topping
  • 2 cups white chocolate chips
  • 1/2 cup crushed peppermint candies

Method
 

Prepare the Cookie Dough
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
Bake the Cookies
  1. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes, until the edges are set but the centers are soft.
  3. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Prepare the Topping
  1. Melt the white chocolate chips in a microwave-safe bowl, stirring every 30 seconds until fully melted and smooth.
  2. Once the cookies are cool, dip half of each cookie into the melted white chocolate, allowing excess to drip off.
  3. Sprinkle crushed peppermint over the melted chocolate before it sets.
Let Set
  1. Place the dipped cookies on parchment paper and allow the white chocolate to set completely at room temperature or in the refrigerator for quicker results.
  2. Once set, store the cookies in an airtight container.
