Cooking the Chili
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté for 5 minutes until softened.
- Stir in minced garlic and cook for another minute until fragrant.
- Add rinsed white beans, pumpkin puree, vegetable broth, chili powder, cumin, smoked paprika, salt, and black pepper. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low and let it simmer for 30 minutes, stirring occasionally.
- Taste the chili and adjust seasonings as necessary.
Serving
- Ladle the chili into bowls and top with chopped cilantro, sliced avocado, and a dollop of sour cream if desired.
