Ingredients
  

For the Base
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 stalks celery diced
  • 2 carrots carrots diced
  • 3 cloves garlic minced
  • 8 cups chicken broth or turkey broth
  • 2 cups shredded cooked turkey
  • 1 teaspoon thyme
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper adjust to taste
For the Garnish
  • 1/4 cup fresh parsley chopped

Method
 

Prepare the Base
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, celery, and carrots. Sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
Cook the Soup
  1. Pour in the chicken broth and bring to a boil.
  2. Once boiling, reduce the heat and add the shredded turkey, thyme, salt, and black pepper.
  3. Simmer for 30 minutes, allowing the flavors to meld.
Serve the Soup
  1. Ladle the soup into bowls and garnish with chopped fresh parsley.
