Ingredients
  

For the Base
  • 2 cups zucchini sliced
  • 2 cups cauliflower florets
  • 1 cup carrots sliced
  • 1 cup creamy vegetable broth
For the Sauce
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk or plant-based milk
  • 1 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Topping
  • 1 cup bread crumbs
  • 1/2 cup parmesan cheese grated
  • 2 tablespoons olive oil

Method
 

Prepare the Vegetables
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the zucchini, cauliflower, and carrots.
Make the Sauce
  1. In a saucepan, melt the butter over medium heat.
  2. Whisk in the flour and cook for 1-2 minutes to form a roux.
  3. Gradually whisk in the milk until smooth, then add nutmeg, salt, and pepper. Cook until thickened.
Combine and Assemble
  1. Pour the sauce over the vegetables and mix well.
  2. Transfer the mixture to a greased baking dish.
Prepare the Topping
  1. In a small bowl, combine the bread crumbs, parmesan cheese, and olive oil.
  2. Sprinkle the breadcrumb mixture evenly over the veggie mixture in the baking dish.
Bake
  1. Bake in the preheated oven for 30-35 minutes, until the top is golden brown and the vegetables are tender.
  2. Let it cool for a few minutes before serving.
