Ingredients
  

For the Base
  • 4 cups mixed greens
  • 1 cup butternut squash, cubed roasted
For the Topping
  • 1 cup dried cranberries
  • 1/2 cup pecans toasted
  • 1/4 cup feta cheese crumbled
For the Dressing
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Base
  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, and pepper, then spread on a baking sheet.
  3. Roast in the preheated oven for 25-30 minutes until tender and slightly caramelized.
Assemble the Salad
  1. In a large bowl, combine the mixed greens and roasted butternut squash.
  2. Add the dried cranberries and toasted pecans to the greens.
  3. Sprinkle the crumbled feta cheese on top.
Make the Dressing
  1. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and black pepper.
  2. Taste and adjust seasoning if necessary.
Dress the Salad
  1. Drizzle the dressing over the salad just before serving.
  2. Toss gently to combine all ingredients.
Serve
  1. Transfer the salad to a serving platter and enjoy!

Notes
