Ingredients
  

For the Base
  • 2 cups sweet potatoes peeled and cubed
  • 4 cups mixed salad greens
For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • 1 teaspoon mustard
  • 1 clove garlic minced
For the Topping
  • 1 cup cherry tomatoes halved
  • 1/2 cup feta cheese crumbled
  • 1/4 cup red onion thinly sliced

Method
 

Prepare the Sweet Potatoes
  1. Preheat the oven to 425°F (220°C).
  2. Toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. Roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.
Make the Dressing
  1. In a small bowl, whisk together olive oil, apple cider vinegar, honey, mustard, and minced garlic.
  2. Season with salt and pepper to taste.
Assemble the Salad
  1. In a large bowl, combine the mixed salad greens with the roasted sweet potatoes.
  2. Add cherry tomatoes, feta cheese, and red onion on top.
  3. Drizzle the dressing over the salad and toss gently to combine.
