Spinach & Feta Pastry Pinwheels

Ingredients
  

For the Pastry
  • 1 package puff pastry thawed
  • 1 egg egg beaten for egg wash
For the Filling
  • 2 cups fresh spinach packed
  • 1 cup feta cheese crumbled
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Filling
  1. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  2. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  3. In a mixing bowl, combine the wilted spinach, crumbled feta cheese, oregano, salt, and black pepper. Mix well to combine.
Assemble the Pinwheels
  1. Preheat the oven to 400°F (200°C). Roll out the thawed puff pastry on a lightly floured surface to smooth any creases.
  2. Spread the spinach and feta mixture evenly over the pastry, leaving a small border around the edges.
  3. Starting from one edge, carefully roll the pastry into a tight log. Seal the edges by pressing them together.
Bake the Pinwheels
  1. Slice the rolled pastry into 1-inch thick rounds and place them on a baking sheet lined with parchment paper.
  2. Brush the tops of the pinwheels with the beaten egg to give them a golden color when baked.
  3. Bake in the preheated oven for 20-25 minutes or until golden brown and flaky.
Serve
  1. Remove from the oven and allow to cool slightly before serving. Enjoy warm or at room temperature.

Notes

These pinwheels can be made ahead of time and frozen before baking. Simply bake them directly from the freezer, adding a few extra minutes to the cooking time.
