Ingredients
  

For the Base
  • 2 cups sushi rice
  • 3 cups water for cooking rice
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
For the Topping
  • 8 ounces sushi-grade salmon sliced
  • 1 cup cucumber julienned
  • 1 tablespoon sriracha
  • 1 tablespoon mayonnaise preferably Japanese mayo
  • 1 tablespoon sesame seeds for garnish
  • 2 tablespoons green onions chopped, for garnish

Method
 

Prepare the Rice
  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  3. Remove from heat and let it sit covered for 10 minutes.
  4. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this into the cooked rice gently and let it cool.
Prepare the Toppings
  1. Slice the sushi-grade salmon into bite-sized pieces.
  2. Slice the avocado and julienne the cucumber.
Mix the Spicy Sauce
  1. In a small bowl, combine sriracha and mayonnaise. Adjust the spiciness to your preference.
Assemble the Bowls
  1. Divide the sushi rice among four bowls.
  2. Top each bowl with sliced salmon, avocado, and cucumber.
  3. Drizzle the spicy sauce over the toppings.
  4. Sprinkle sesame seeds and chopped green onions on top for garnish.

Notes
