Ingredients
  

For the Grits
  • 1 cup grits preferably stone-ground
  • 4 cups water or chicken broth for more flavor
  • 1 cup sharp cheddar cheese shredded
  • 2 tablespoons butter unsalted
  • 1 teaspoon salt
For the Shrimp
  • 1 pound shrimp peeled and deveined
  • 4 slices bacon diced
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon cajun seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 2 tablespoons green onions sliced, for garnish

Method
 

Prepare the Grits
  1. In a medium saucepan, bring the water (or chicken broth) to a boil.
  2. Stir in the grits and salt, reduce heat to low, and cook for about 20-25 minutes, stirring occasionally until thickened.
  3. Once cooked, stir in the butter and cheddar cheese until melted and smooth.
Cook the Shrimp
  1. In a large skillet, cook the diced bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pan.
  2. Add olive oil to the skillet and heat over medium-high heat.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the shrimp, paprika, and cajun seasoning, cooking until the shrimp turn pink, about 3-5 minutes.
  5. Stir in the lemon juice and remove from heat.
Assemble the Dish
  1. Spoon the creamy grits into bowls.
  2. Top with the sautéed shrimp and drizzle with the bacon drippings.
  3. Garnish with crispy bacon and sliced green onions before serving.

Notes
