Scotcheroos are a delicious no-bake treat made with crispy rice cereal, peanut butter, and a chocolate butterscotch topping. They're perfect for satisfying your sweet tooth!

Ingredients
  

For the Base
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup peanut butter creamy
  • 6 cups crispy rice cereal
For the Topping
  • 1 cup chocolate chips
  • 1 cup butterscotch chips

Method
 

Prepare the Base
  1. In a medium saucepan, combine the granulated sugar and light corn syrup. Heat over medium heat, stirring until the mixture comes to a boil.
  2. Once boiling, remove from heat and stir in the peanut butter until smooth.
  3. In a large bowl, pour the peanut butter mixture over the crispy rice cereal. Stir until evenly coated.
  4. Press the mixture into a greased 9x13 inch baking dish, spreading it evenly.
Make the Topping
  1. In a microwave-safe bowl, combine the chocolate chips and butterscotch chips.
  2. Microwave in 30-second intervals, stirring between each interval until melted and smooth.
  3. Pour the melted chocolate mixture over the pressed cereal base and spread evenly.
  4. Allow to cool at room temperature until the topping sets, about 1 hour.
Serve
  1. Once set, cut into squares and serve.
  2. Store any leftovers in an airtight container at room temperature.

Notes
