Ingredients
  

For the Base
  • 4 fillets salmon about 6 ounces each
  • 2 cups fennel bulbs sliced
  • 2 tablespoons olive oil divided
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
For Garnish
  • 1 lemon lemon cut into wedges
  • 2 tablespoons fresh dill chopped

Method
 

Prepare the Ingredients
  1. Preheat your oven to 400°F (200°C).
  2. Slice the fennel bulbs thinly and set aside.
Prepare the Salmon
  1. In a large bowl, mix the sliced fennel with 1 tablespoon of olive oil, salt, and pepper.
  2. Place the fennel mixture on a baking sheet, forming a bed for the salmon.
  3. Drizzle the salmon fillets with the remaining olive oil, and season with salt and pepper.
Roast the Salmon
  1. Lay the salmon fillets on top of the fennel on the baking sheet.
  2. Roast in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
Prepare for Serving
  1. Remove the baking sheet from the oven and let the salmon rest for a few minutes.
  2. Serve the salmon and fennel warm, garnished with lemon wedges and chopped dill.
