Reese’S Peanut Butter Cupcakes

Ingredients
  

For the Base
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup peanut butter creamy or crunchy
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
For the Frosting
  • 1/2 cup unsalted butter softened
  • 1 cup powdered sugar
  • 1/4 cup cocoa powder
  • 1/4 cup peanut butter
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Method
 

Making the Cupcake Base
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together peanut butter, egg, milk, vegetable oil, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Divide the batter evenly into the prepared cupcake liners, filling each about 2/3 full.
  6. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and allow the cupcakes to cool completely on a wire rack.
Making the Frosting
  1. In a mixing bowl, beat the softened butter until creamy and smooth.
  2. Gradually add powdered sugar and cocoa powder, mixing until well combined.
  3. Add peanut butter, milk, and vanilla extract, then beat until the frosting is fluffy and smooth.
Assembling the Cupcakes
  1. Once the cupcakes are completely cooled, frost each cupcake generously with the peanut butter frosting.
  2. Top each frosted cupcake with a mini Reese's cup for garnish.
  3. Serve immediately or store in an airtight container.

Notes
