Ingredients
  

For the Base
  • 4 cups cubed bread preferably stale or toasted
  • 2 cups pumpkin puree
  • 1 cup milk
  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
For the Topping
  • 1 cup chopped pecans toasted if desired
  • 1/2 cup maple syrup for drizzling

Method
 

Prepare the Base
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a large bowl, whisk together the pumpkin puree, milk, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt until smooth.
  3. Add the cubed bread to the mixture and gently fold until the bread is evenly coated.
Combine and Bake
  1. Pour the bread mixture into the prepared baking dish, spreading it evenly.
  2. Sprinkle the chopped pecans evenly over the top of the bread mixture.
  3. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the pudding is set.
Serve
  1. Once baked, remove from the oven and let it cool for about 10 minutes.
  2. Drizzle with maple syrup before serving, and enjoy warm.
