  • 1 cup milk or any non-dairy alternative
  • 1 cup pumpkin puree
  • 2 large eggs
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
For the Topping
  • 1/2 cup maple syrup for drizzling
  • 1/4 cup whipped cream optional
  • 1/4 cup chopped pecans optional

Method
 

Preparing the Batter
  1. In a mixing bowl, whisk together the milk, pumpkin puree, eggs, brown sugar, vanilla extract, pumpkin pie spice, and salt until well combined.
  2. Pour the batter into a shallow dish to make it easy for dipping the bread.
Cooking the French Toast
  1. Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
  2. Dip each slice of bread into the batter, ensuring both sides are coated, then place them onto the heated skillet.
  3. Cook for about 3-4 minutes on each side, or until golden brown and cooked through.
Serving
  1. Once cooked, remove the French toast from the skillet and keep warm.
