Prepare the Potato Crust

- Stir in the shredded cheddar cheese, spinach, diced bell pepper, and black pepper.
Assemble and Bake
- Once the potato crust is done baking, remove it from the oven and pour the egg mixture into the crust.
- Return the quiche to the oven and bake for an additional 25-30 minutes, or until the filling is set and lightly browned on top.
