Ingredients
  

For the Base
  • 4 large eggs preferably free-range
  • 1 tablespoon olive oil for frying
For the Pili Pili Sauce
  • 2 tablespoons red chili flakes adjust based on spice preference
  • 1 clove garlic minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon lemon juice freshly squeezed
  • 1 pinch salt
For Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Cooking the Eggs
  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
  3. Once cooked, carefully transfer the eggs to a plate.
Making the Pili Pili Sauce
  1. In a small saucepan, heat vegetable oil over low heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in red chili flakes and salt, and cook for an additional 2 minutes, allowing the flavors to meld.
  4. Remove from heat, and add lemon juice.
Serving
  1. Drizzle the spicy Pili Pili sauce over the cooked eggs.
  2. Garnish with chopped parsley before serving.
  3. Serve immediately with crusty bread or on its own.

Notes
