Method
Baking the Cake
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, buttermilk, coffee, vegetable oil, vanilla extract, and peppermint extract. Mix until well combined.
- Divide the batter evenly between the prepared pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
Making the Frosting
- In a large bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar, alternating with the heavy cream, and beat until smooth.
- Add the peppermint extract and cocoa powder. Mix until fully combined and fluffy.
Assembling the Cake
- Once the cakes are completely cooled, place one layer on a serving plate.
- Spread a layer of frosting on top of the first cake layer.
- Place the second cake layer on top and spread frosting over the top and sides of the entire cake.
- Garnish with crushed peppermint candies on top and around the sides if desired.
- Slice and serve the cake, enjoying the festive flavors!
