Method
Cook the Pasta
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- Reserve 1 cup of pasta water, then drain the spaghetti and set aside.
Prepare the Sauce
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the can of diced tomatoes, olives, capers, red pepper flakes, oregano, salt, and black pepper. Stir to combine.
- Simmer the sauce for about 10-12 minutes, allowing the flavors to meld together.
Combine and Serve
- Add the cooked spaghetti to the sauce. Toss to coat the pasta evenly, adding reserved pasta water if needed to loosen the sauce.
- Remove from heat and stir in chopped parsley. Serve hot, garnished with grated Parmesan cheese if desired.
