Ingredients
  

For the Chia Base
  • 1 cup chia seeds
  • 4 cups unsweetened almond milk
  • 2 tablespoons maple syrup for sweetness
  • 1 teaspoon vanilla extract
For the Topping
  • 1 cup sliced strawberries
  • 1/2 cup pistachios roughly chopped
  • 1/4 cup coconut flakes

Method
 

Prepare the Chia Base
  1. In a large bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract.
  2. Stir well to prevent clumping, then cover and refrigerate for at least 2 hours or overnight until it thickens.
Assemble the Parfaits
  1. Once the chia pudding is set, remove it from the refrigerator.
  2. In serving glasses or bowls, layer the chia pudding with sliced strawberries and chopped pistachios.
  3. Repeat the layers until the glasses are filled, finishing with a layer of coconut flakes on top.
Serve
  1. Serve immediately or refrigerate for up to 2 hours before serving for a refreshing treat.
