- Stir well to prevent clumping, then cover and refrigerate for at least 2 hours or overnight until it thickens.
Assemble the Parfaits
- Once the chia pudding is set, remove it from the refrigerator.
- In serving glasses or bowls, layer the chia pudding with sliced strawberries and chopped pistachios.
- Repeat the layers until the glasses are filled, finishing with a layer of coconut flakes on top.
Serve
- Serve immediately or refrigerate for up to 2 hours before serving for a refreshing treat.
