Ingredients
  

For the Base
  • 1 cup orzo pasta uncooked
  • 2 cups water for boiling
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
For the Dressing
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Garnish
  • 1/4 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped

Method
 

  1. In a medium pot, bring 2 cups of water to a boil.
  2. Add 1 cup of orzo pasta to the boiling water and cook for 8-10 minutes until al dente.
  3. Drain the orzo and rinse under cold water to cool.
  4. In a large bowl, combine the cooled orzo, halved cherry tomatoes, diced cucumber, and diced bell pepper.
  5. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper to make the dressing.
  6. Pour the dressing over the orzo mixture and toss to combine.
  7. Garnish with crumbled feta cheese and chopped parsley before serving.
