Prepare the Chicken
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, and black pepper. Mix well.
- Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let them marinate for at least 10 minutes.
Cook the Dish
- In a large oven-safe skillet, heat a little olive oil over medium-high heat. Once hot, place the chicken thighs skin-side down in the skillet.
- Sear the chicken for about 5-7 minutes until the skin is golden brown.
- Flip the chicken thighs over and add the trimmed green beans around the chicken in the skillet.
- Transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the green beans are tender.
Serve
- Remove the skillet from the oven and let it rest for a few minutes before serving.
- Serve the chicken thighs with the roasted green beans, drizzled with any pan juices for added flavor.

Feel free to substitute chicken breasts for thighs if preferred. You can also add other vegetables like bell peppers or carrots for more variety.
