Cooking the Chicken
- Season the chicken thighs with salt and pepper on both sides.

Cooking the Noodles
- While the chicken is cooking, bring a pot of salted water to boil. Cook the egg noodles according to package instructions until al dente, then drain.
- In the same skillet with the chicken, add chicken broth and bring to a simmer.
Combining Ingredients
- Add the cooked noodles to the skillet, stirring to combine with the broth and chicken.
- Stir in the butter until melted, then add fresh spinach if using, and cook until wilted.
Serving
- Remove from heat and sprinkle with fresh parsley before serving.
