Ingredients
  

For the Base
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup fresh corn kernels grilled or boiled
  • 1 cup chopped cilantro
For the Dressing
  • 1/2 cup mayonnaise
  • 1 lime lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Garnish
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons sliced jalapeños optional

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded green cabbage, shredded carrots, fresh corn kernels, and chopped cilantro.
  2. Toss the vegetables together until evenly mixed.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, lime juice, chili powder, garlic powder, salt, and black pepper until smooth.
Combine
  1. Pour the dressing over the vegetable mixture.
  2. Gently fold the dressing into the vegetables until everything is well coated.
Chill
  1. Cover the coleslaw and refrigerate for at least 15 minutes to allow the flavors to meld.
Serve
  1. Before serving, give the coleslaw a good stir and taste for seasoning.
  2. Garnish with crumbled cotija cheese and sliced jalapeños if desired.
