Lemonbutter Chicken Thighs With Capers

Ingredients
  

For the Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 2 tablespoons olive oil for searing
For the Sauce
  • 4 tablespoons butter unsalted
  • 1 lemon lemon juice freshly squeezed
  • 2 tablespoons capers drained and rinsed
  • 2 cloves garlic minced
For Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Season the chicken thighs with salt and black pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken thighs skin-side down and sear for about 7-8 minutes until golden brown.
  4. Flip the chicken and cook for another 7-8 minutes until cooked through. Remove from skillet and set aside.
  5. In the same skillet, reduce the heat to medium and add butter and minced garlic. Sauté for about 1 minute until fragrant.
  6. Add lemon juice and capers to the skillet, stirring to combine. Let simmer for 2-3 minutes.
  7. Return the chicken thighs to the skillet, spoon the sauce over them, and cook for an additional 2 minutes to heat through.
  8. Garnish with chopped parsley before serving.

Notes
