Ingredients
  

For the Salmon
  • 4 fillets salmon skinless
  • 2 tablespoons olive oil
  • 2 tablespoons fresh dill chopped
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Cucumber Salad
  • 2 cups cucumber sliced
  • 1 cup cherry tomatoes halved
  • 1 tablespoon red onion finely chopped
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt

Method
 

Prepare the Marinade and Salmon
  1. In a bowl, mix together the olive oil, fresh dill, lemon juice, minced garlic, salt, and black pepper.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for 10 minutes.
Grill the Salmon
  1. Preheat the grill to medium-high heat.
  2. Remove the salmon from the marinade and grill for about 4-5 minutes on each side, or until cooked through and flaky.
Prepare the Cucumber Salad
  1. In a large bowl, combine sliced cucumbers, halved cherry tomatoes, and chopped red onion.
  2. Add the fresh dill, olive oil, lemon juice, and salt. Toss gently to combine.
Serve
  1. Plate the grilled salmon alongside a generous serving of cucumber salad.
  2. Garnish with additional dill if desired and serve immediately.
