Ingredients
  

For the Base
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter softened
  • 2 large eggs
  • 1 cup fresh blueberries washed and drained
  • 1 tablespoon lemon zest
  • 0.25 cup fresh lemon juice
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Method
 

Prepare the Loaf
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the lemon zest and lemon juice.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the blueberries.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center comes out clean.
Prepare the Glaze
  1. While the loaf is baking, prepare the glaze by whisking together the powdered sugar and lemon juice until smooth.
  2. Once the loaf has cooled for about 10 minutes, drizzle the glaze over the top.
  3. Allow the loaf to cool completely before slicing.
