- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a large bowl, combine the mashed bananas, tahini, and brown sugar. Mix until smooth.
- Add the eggs and vanilla extract to the banana mixture, and stir until well combined.
- In another bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan. Sprinkle the top with chopped walnuts and brown sugar if desired.
- Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
