Curried Chicken Thighs

Delicious and aromatic curried chicken thighs that are perfect for a weeknight dinner, paired with rice or naan.

Ingredients
  

For the Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 2 tablespoons olive oil
  • 2 tablespoons curry powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 cup coconut milk
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Garnish
  • 1/4 cup fresh cilantro chopped
  • 1 lime lime wedges

Method
 

Prepare the Chicken
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together olive oil, curry powder, garlic powder, ginger powder, salt, and black pepper.
  3. Add chicken thighs to the bowl and coat them well with the spice mixture.
Cook the Chicken
  1. Heat an oven-safe skillet over medium-high heat.
  2. Sear the chicken thighs skin-side down for 5-7 minutes until golden brown.
  3. Flip the thighs and pour in the coconut milk and lime juice.
  4. Bring to a simmer, then transfer the skillet to the preheated oven.
  5. Bake for 25-30 minutes or until the chicken is cooked through.
Finish and Serve
  1. Remove the skillet from the oven and let the chicken rest for a few minutes.
  2. Garnish with chopped cilantro and serve with lime wedges on the side.

Notes
