Ingredients
  

For the Salmon Bites
  • 1 pound salmon fillet cut into bite-sized pieces
  • 1 cup panko breadcrumbs for crispiness
  • 2 tablespoons olive oil to help with browning
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Mango Salsa
  • 1 cup ripe mango diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper finely chopped
  • 1 lime lime juice freshly squeezed
  • 1 tablespoon cilantro chopped
  • 1/4 teaspoon salt

Method
 

Prepare the Salmon Bites
  1. Preheat the air fryer to 400°F (200°C).
  2. In a mixing bowl, combine panko breadcrumbs, garlic powder, paprika, salt, and black pepper.
  3. Drizzle olive oil over the salmon pieces and toss to coat.
  4. Dredge each salmon piece in the breadcrumb mixture until fully coated.
Cook the Salmon Bites
  1. Place the coated salmon bites in a single layer in the air fryer basket.
  2. Air fry for 10-12 minutes, flipping halfway through, until golden brown and cooked through.
Prepare the Mango Salsa
  1. In a bowl, combine diced mango, red onion, bell pepper, lime juice, cilantro, and salt.
  2. Toss gently to mix all ingredients together.
  3. Let the salsa sit for at least 5 minutes to allow flavors to meld.
Serve
  1. Once the salmon bites are cooked, remove them from the air fryer.
  2. Serve the crispy salmon bites warm with mango salsa on the side.
