Prepare the Base
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
- Press the mixture into the bottom of a greased 9x13 inch baking dish.
- Bake for 10 minutes, then remove from the oven and set aside to cool.
Make the Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add sour cream, sugar, eggs, vanilla extract, and orange zest. Mix until fully combined and smooth.
- Pour the cheesecake filling over the cooled crust, spreading it evenly.
- Bake for 30 minutes or until the center is set but slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional 10 minutes.
Prepare the Cranberry Topping
- In a small saucepan, combine cranberries, sugar, water, and orange juice.
- Cook over medium heat until the cranberries burst and the mixture thickens, about 10 minutes.
- Remove from heat and let cool slightly.
Assemble and Chill
- Spread the cranberry topping over the baked cheesecake layer.
- Refrigerate the cheesecake bars for at least 4 hours or overnight before cutting into squares.
