Ingredients
  

For the Base
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 cup milk whole
For the Cranberry Filling
  • 2 cups fresh cranberries or frozen, thawed
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
For the Topping
  • 1 cup brown sugar packed
  • 1/2 cup all-purpose flour
  • 1/4 cup unsalted butter melted
  • 1 teaspoon cinnamon

Method
 

Prepare the Cranberry Filling
  1. In a medium saucepan, combine the cranberries, sugar, and cornstarch.
  2. Cook over medium heat, stirring often, until the mixture starts to bubble and thicken, about 5-7 minutes.
Make the Cake Batter
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add the softened butter, eggs, and milk, and mix until smooth.
Assemble the Cake
  1. Pour half of the batter into the prepared baking dish and spread it evenly.
  2. Spoon the cranberry filling over the batter, spreading it evenly.
  3. Top with the remaining batter, carefully spreading it over the cranberries.
Prepare the Topping
  1. In a small bowl, mix together brown sugar, flour, melted butter, and cinnamon until crumbly.
  2. Sprinkle the topping evenly over the cake batter.
Bake the Cake
  1. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for at least 15 minutes before slicing and serving.
