Method
Prepare the Filling
- In a small saucepan, heat the heavy cream over medium heat until just simmering.
- Remove from heat and add the dark chocolate chips and vanilla extract. Stir until smooth and chocolate is melted.
Prepare the Pastry
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry sheets on a lightly floured surface and cut into squares (approximately 4x4 inches).
Assemble the Pastries
- Place a spoonful of the chocolate filling in the center of each pastry square.
- Fold the corners of the pastry over the filling to create a pocket and seal the edges by pressing down with a fork.
Bake
- Brush the tops of the pastries with the beaten egg for a golden finish.
- Place the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
Serve
- Remove from the oven and let cool slightly.
- Dust with powdered sugar before serving.
