Method
Prepare the Potatoes
- Preheat the oven to 400°F (200°C).
- Pierce each potato several times with a fork, then rub with olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes until tender.
Make the Filling
- In a mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, and half of the cheddar cheese.
- Mix until well combined and creamy.
Stuff the Potatoes
- Once the potatoes are cooked, remove them from the oven and let them cool for a few minutes.
- Cut each potato in half lengthwise and scoop out some of the flesh to create space for the filling.
- Fill each potato half with the buffalo chicken mixture.
Add Cheese and Bake
- Sprinkle the remaining cheddar cheese over the stuffed potatoes.
- Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
Serve
- Remove from the oven and let cool slightly.
- Garnish with sliced green onions and a drizzle of ranch dressing before serving.
