Ingredients
  

For the Salad
  • 2 ears corn kernels removed
  • 200 grams haloumi cheese sliced
  • 1 large ripe mango diced
  • 2 cups mixed salad greens
For the Dressing
  • 1 cup plain yoghurt
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 pinch salt

Method
 

  1. Preheat the grill or a grill pan over medium-high heat.
  2. Remove the kernels from the corn and place them in a bowl.
  3. Grill the corn for about 5-7 minutes until charred, stirring occasionally.
  4. While the corn is grilling, heat a non-stick pan over medium heat and grill the haloumi slices for about 2-3 minutes on each side until golden brown.
  5. In a small bowl, whisk together the yoghurt, lemon juice, honey, and salt to create the dressing.
  6. In a large salad bowl, combine the grilled corn, haloumi, diced mango, and mixed greens.
  7. Drizzle the creamy yoghurt dressing over the salad and toss gently to combine.
  8. Serve immediately and enjoy!
