Ingredients
  

For the Base
  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter cold and cubed
  • 1/4 cup ice water as needed
For the Filling
  • 3 large yellow onions thinly sliced
  • 1 cup Gruyère cheese shredded
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method
 

Prepare the Base
  1. In a mixing bowl, combine the flour and salt. Add the cold butter and mix until it resembles coarse crumbs.
  2. Gradually add ice water, mixing until the dough forms. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
Caramelize the Onions
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced onions and salt, stirring occasionally until they are soft and golden brown, about 25 minutes.
Assemble the Dish
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the chilled dough on a floured surface and transfer it to a pie dish.
  3. Spread the caramelized onions evenly over the crust and top with shredded Gruyère cheese.
Bake
  1. Bake in the preheated oven for 30 minutes, or until the cheese is bubbly and golden.
  2. Remove from oven and let it cool for a few minutes before serving.
