Ingredients
  

For the Base
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar
For the Cheesecake Filling
  • 16 ounces cream cheese softened
  • 1 cup sour cream
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon chai spice blend
  • 1 teaspoon vanilla extract
For the Caramel Sauce
  • 1 cup caramel sauce store-bought or homemade

Method
 

Prepare the Base
  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined.
  3. Press the mixture into the bottom of a greased 9x9 inch baking dish to form an even layer.
  4. Bake in the preheated oven for 10 minutes, then remove and set aside to cool.
Make the Cheesecake Filling
  1. In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.
  2. Add sour cream, sugar, eggs, chai spice blend, and vanilla extract. Beat until fully combined and smooth.
  3. Pour the cheesecake filling over the cooled crust and spread evenly.
  4. Bake for 25-30 minutes, or until the center is set but still slightly jiggly.
  5. Turn off the oven and let the cheesecake cool in the oven for 1 hour with the door slightly ajar.
Chill and Serve
  1. Once cooled, refrigerate the cheesecake for at least 4 hours or overnight to set completely.
  2. Before serving, drizzle with caramel sauce and cut into squares.
