Ingredients
  

For the Base
  • 1 cup all-purpose flour
  • 1/2 cup cold unsalted butter cut into cubes
  • 1/4 cup granulated sugar
  • 1/4 cup ice water
For the Filling
  • 3 medium apples peeled, cored, and sliced
  • 1/2 cup brown sugar
  • 1 tablespoon fresh sage chopped
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
For the Caramel Sauce
  • 1 cup granulated sugar
  • 1/2 cup heavy cream warm
  • 1/4 cup butter cut into pieces
  • 1/2 teaspoon salt

Method
 

Prepare the Pastry
  1. In a mixing bowl, combine the flour and granulated sugar.
  2. Add the cold butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
Prepare the Filling
  1. In a large bowl, toss the sliced apples with brown sugar, chopped sage, cinnamon, and lemon juice. Set aside.
Make the Caramel Sauce
  1. In a saucepan over medium heat, melt the granulated sugar, stirring until it turns amber in color.
  2. Remove from heat and carefully whisk in warm heavy cream and butter until smooth. Stir in salt and let cool slightly.
Assemble the Galette
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the chilled pastry dough on a floured surface to a 12-inch circle.
  3. Transfer the dough to a parchment-lined baking sheet and arrange the apple filling in the center, leaving a 2-inch border.
  4. Fold the edges of the dough over the apples, pleating as necessary. Brush the dough with a bit of melted butter.
Bake the Galette
  1. Bake in the preheated oven for 35-40 minutes or until the apples are tender and the crust is golden brown.
  2. Remove from the oven and drizzle with the prepared caramel sauce before serving.
