Ingredients
  

For the Base
  • 1 large cauliflower cut into florets
  • 1 cup buttermilk
  • 2 tablespoons unsalted butter
  • 3 cloves garlic minced
For the Herbs
  • 2 tablespoons fresh chives chopped
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon dried thyme
For Seasoning
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste

Method
 

Prepare the Cauliflower
  1. Bring a large pot of salted water to a boil.
  2. Add the cauliflower florets and cook for about 15 minutes, or until tender.
Mash the Cauliflower
  1. Drain the cauliflower and return it to the pot.
  2. Add buttermilk, butter, and minced garlic to the pot.
  3. Use a potato masher or immersion blender to mash until smooth.
Add Herbs and Seasoning
  1. Stir in the chopped chives, parsley, thyme, salt, and pepper.
  2. Mix until well combined and adjust seasoning to taste.
Serve
  1. Transfer the mashed cauliflower to a serving bowl.
  2. Garnish with additional herbs if desired and serve warm.
