Ingredients
  

For the Base
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumbers sliced
  • 1 cup carrots shredded
For the Chicken
  • 1 pound chicken breast cooked and shredded
  • 1/2 cup buffalo sauce
For the Dressing
  • 1/2 cup ranch dressing
  • 1 tablespoon lime juice
For Garnish
  • 1/4 cup blue cheese crumbles
  • 1 tablespoon fresh parsley chopped

Method
 

Prepare the Chicken
  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts in a baking dish and bake for 20 minutes or until fully cooked.
  3. Once cooked, shred the chicken using two forks and mix with buffalo sauce.
Prepare the Salad Base
  1. In a large bowl, combine the chopped romaine, cherry tomatoes, cucumbers, and shredded carrots.
  2. Toss the salad ingredients together until evenly mixed.
Make the Dressing
  1. In a small bowl, mix the ranch dressing with lime juice until well combined.
Assemble the Salad
  1. Top the salad base with the buffalo chicken mixture.
  2. Drizzle the ranch dressing over the top.
  3. Sprinkle with blue cheese crumbles and chopped parsley for garnish.
