Method
Preparing the Cookie Base
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

Creating the Filling

- Scoop out tablespoon-sized portions of cookie dough and flatten them slightly.
- Place a teaspoon of the cinnamon filling in the center of half of the cookies.
- Top with the remaining cookie dough portions and seal the edges to form the cookies.
Baking the Cookies
- Place the assembled cookies on the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.

- In a mixing bowl, combine the powdered sugar, milk, and vanilla extract. Whisk until smooth and creamy.
- Drizzle the frosting over the cooled cookies and top with sprinkles if desired.
