Baked Feta Spaghetti Squash

Ingredients
  

For the Base
  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Topping
  • 1 cup feta cheese crumbled
  • 1 cup cherry tomatoes halved
  • 2 tablespoons fresh basil chopped
  • 1 teaspoon red pepper flakes optional

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle the inside of the squash with olive oil, and season with salt and pepper.
  4. Place the squash halves cut-side down on a baking sheet and roast for 30-35 minutes until tender.
  5. In a mixing bowl, combine the crumbled feta cheese, halved cherry tomatoes, and chopped basil.
  6. After roasting, carefully flip the squash over and fill the hollowed centers with the feta and tomato mixture.
  7. Return to the oven and bake for an additional 10-15 minutes until the cheese is slightly golden.
  8. Remove from the oven, sprinkle with red pepper flakes if desired, and serve warm.

Notes
