  • 3 tbsp red curry paste
  • 50g fresh cilantro, chopped
  • 50g fresh mint, chopped
  • 12 sliced chili peppers (to taste)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tbsp vegetable oil

Instructions

  1. Heat oil in a large pot over medium heat. Sauté chopped onion until golden brown.
  2. Add minced garlic, ginger, and smashed lemongrass; stir until fragrant.
