  • 2 large fresh lemons, juiced
  • 4 tbsp high-quality extra virgin olive oil
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced into half-moons
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • Salt & pepper to taste

Instructions

  1. In a mixing bowl, whisk together olive oil, minced garlic, lemon juice, salt, and pepper.
  2. Add chicken breasts to the marinade; cover and refrigerate for at least 30 minutes.

  4. Heat a grill pan over medium-high heat; cook marinated chicken for about 6-7 minutes per side until fully cooked (internal temperature should reach 165°F).
  5. Let the chicken rest for 5 minutes before slicing into bite-sized pieces.
  6. In a large bowl, combine diced veggies with sliced chicken and Kalamata olives; drizzle with additional olive oil and lemon juice before tossing gently.
