  • 2 medium fresh beets (about 300g)
  • 2 navel oranges, segmented
  • 1/2 cup crumbled feta cheese (75g)
  • 2 cups arugula (60g)
  • 2 tablespoons extra virgin olive oil (30ml)
  • 1 tablespoon balsamic vinegar (15ml)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap the beets in foil and roast for 45-60 minutes until tender. Allow to cool before peeling.
  2. While the beets roast, segment the oranges by removing the peel and cutting between the membranes.
  3. In a large bowl, toss arugula with olive oil and a pinch of salt until coated.
  4. Chop cooled beets into bite-sized pieces and combine with orange segments over the arugula.
  5. Crumble feta cheese on top and drizzle with balsamic vinegar.
  6. Gently toss to combine and serve immediately.
