  • 1 cup fresh pineapple chunks
  • 1 cup bell peppers, diced (any color)
  • 2 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • ¼ cup brown sugar
  • ½ cup coconut milk
  • 2 cups cooked jasmine rice

Instructions

  1. 1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. 2. In a bowl, whisk together soy sauce, garlic, brown sugar, and coconut milk until smooth to create the marinade.
  3. 3. Season the chicken with salt and pepper and place it in a zip-lock bag. Pour half of the marinade over the chicken, seal the bag, and refrigerate for at least 30 minutes.
  4. 4. Chop bell peppers and pineapple into bite-sized pieces.
  5. 5. After marinating, discard any leftover marinade from the chicken and place it in the prepared baking dish. Scatter chopped vegetables around it and drizzle with remaining marinade.
