  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mash black beans slightly and mix in half of the shredded cheeses.
  3. Place one tortilla flat, add some bean mixture on one half, top with more cheese, and fold.
